Basic Dessert Recipes:
Basic Rice Pudding Recipe
Whole milk is a 'must' for this traditional
creamy pudding.
Ingredients
Short grain pudding rice - 110g (4 oz)
Whole milk - 900 ml (1˝ pints)
Caster sugar - 75g (3 oz)
Butter - 50g (2 oz)
Eggs - 3
Lemons - 2, zest only
Grated nutmeg - 2 tsp, or ground cinnamon
Method
Pre-heat oven to 150 °C / 300 °F / Gas 2.
Place rice in a saucepan, add milk and cook gently for about 15 minutes
until the rice is tender. Add the sugar and butter and stir until
blended in. Let the mixture cool.
Beat the eggs thoroughly and add slowly to the mixture. Add the lemon
zest and 1 teaspoon of the spice.
Pour into a baking dish, sprinkle with the remaining spice and bake for
40-45 minutes
